Potato Fudge

Domino Sugar has this very interesting recipe on their website for
 Potato Fudge:


  • 3 ounces - (3 squares) unsweetened chocolate 
  • 1/4 cup - (1/2 stick) butter or margarine 
  • 1/3 cup - cold mashed potatoes 
  • 1 tsp. - vanilla 
  • Pinch salt 
  • 4 cups - Domino® Confectioners Sugar

Grease an 8x8x2-inch baking dish. In medium heavy saucepan, melt chocolate and butter. Remove from heat. Add potatoes, vanilla and salt. Beat in sugar. Turn out on work surface and knead until smooth. Press into baking dish; chill.

Makes 36 pieces.

  1. I remember this fudge recipe from years ago. It was really popular for a long time. Thanks for reminding of lost past memories.
